WineSmith Faux Chablis

If you're tired of heavily oaked chardonnays and prefer the style of French Chablis, this is definitely a wine worth seeking out.

It has a fruit forward nose of honey, apple and pear; flavors are defined and clean - uncluttered yet intense hitting all the right elements. It had a luscious mouth-feel of vanilla creaminess that mimicked an oaked chardonnay but without all the oak; gorgeous mid-palate

with good acidity and balance. We paired this with a crimini mushroom and caramelized onion pastry puff drizzled with a savory anglaise. Sound enticing? I'd categorize this pairing up there with my first epiphany of tasting Foie gras with Sauternes! Simply divine. ~Pamela Heiligenthal
